This might just be the easiest recipe you’ll ever see. No exact measuring, 25 minutes start to finish, AND they taste exactly like Lays potato chips if you close your eyes!
What you’ll need:
- 1 bunch of kale, ripped into 2 inch pieces (do remember it will shrink quite a bit)
- 2-3 tablespoons olive oil (use a flavored oil if you have it otherwise use a regular olive oil with a tuscan seasoning)
- Salt and Pepper
What you’ll do:
After you’ve ripped your kale, put it in a bowl and drizzle about 2 tablespoons of olive oil and toss with your hands until every piece has oil on it. Line 2 or 3 cookie sheets with aluminum foil and spread the kale over the cookie sheets. Make sure there is NO overlap or your chips will become soggy chunks. Evenly sprinkle with salt, pepper, and Penzy’s Tuscan seasoning (if you used regular olive oil). Bake at 275 degrees for 18 minutes (or until they are crispy) and enjoy.
I love this recipe because it is gluten-free, dairy-free, vegan, and you know that there’s not too much salt because it’s so simple! I could eat these all the time and I’ll be making these year round for a healthy alternative to potato chips!
